I went for a walk in the woods this morning and I saw that carpets of bluebells have started to appear on the forest floor, here in the South East of England.
The combination of sunshine and heavy showers we have had lately got them started nicely, hopefully it won’t be long until they take over the woodlands for a few weeks…
I haven’t heard the cuckoo yet, but it seems that spring is here nonetheless and some of you may find, like me, the urge to make space, empty the wardrobe and shelves and give everything away, lose excess weight and just let go of all these habits and thought patterns that no longer serve you.
With Spring coming, I find myself feeling the need to exercise more and to be mindful of how much I eat… I eat a lot less these days and try to find the balance between lighter less bulky foods while remaining dense in nutrients.
Pine Pollen is an excellent source of food that stimulates the regeneration process of the liver, which is very important as spring is the season that the liver awakens after winter, and it needs extra support throughout this season.
Now I follow the principles of the ayurvedic system, which is very similar to the system of Tibetan Medicine. These two systems explain the idea that every invidual has a personal constitution and it makes sense to eat and exercise according to one’s individual makeup.
According to the Ayurvedic system I’m Kapha-Vata. I’m generally predominantly Kapha but I do have out bursts of Vata – which means being caught up in the commotion of my mind at times…. a good example, I think is writing poetry. I find that when I’m drawn to writing poems, I’m in a Vata mode. When I’m feeling more kapha I’m happy to just sit and knit and engage in a repetitive endeavour, where I can just surrender to the process and relax into it.
The third constitutional energy is the one I tend to lack the most…. Pitta. Fire. Heat. Which to me can be found in competitive sports, being goal driven, knowing clearly what you want and being able to state it out loud regardless of what other people may think.
Anyway the point I’m trying to make is that the way I eat, what, when, where and why, depends a lot on my constitution, the season, what mood I’m in and the potential imbalances I might experience physically or emotionally, which of course will vary from one moment to another…
Pine pollen is one of those special substances that is very nourishing and stabilising for every constitutional type, and we can all do with checking in with our liver and helping it to let go of the old and welcome the new during spring time – regardless of constitution.
These pancakes are very tasty and well suited for a kapha constitution. You can adapt them for Vata by using (organic, ethically sourced) eggs instead of linseeds/flax seeds to make them heavier.
This recipe is Gluten Free, Dairy Free and can be vegan if you choose to use linseeds over eggs or paleo if you use eggs over linseeds. Enjoy 🙂
Ingredients and preparation:
- 1 cup of buckwheat groats that I put directly in the blender with 1 cup of water – left to soak overnight, or for a few hours with a tablespoon of vinegar, citrus juice or whey.
Note: If you dont have a blender and/or have no interest in making freshly ground mixture, you can use buckwheat flour instead. If you do so you can put 1 cup of your buckwheat flour in a mixing bowl, and leave it to soak in 1 cup of water overnight or for a few hours.
You can add most of the rest of the ingredients in, especially if you are going to use linseeds:
- So add 1 tablespoon of bicarbonate of soda (baking powder)
- 1/2 teaspoon of good quality sea salt or pink Himalayan salt
- The equivalent of 2 eggs : 2 tablespoons of lin seeds/flax seeds
- 2.5 tablespoons of Nyishar Pine Pollen Powder, it is very nutritious, which is great when you make pancakes to share with your kid(s) – it even has omega 3 fatty acids in it! – Read here if you want to find out more about the benefits of pine pollen.
- 2 tablespoons of olive oil
Note: If you are going to use 2 eggs instead of lin seeds, then add them at the last minute, no need to leave them in the mixture over night.
When you are ready to make your pancakes, add the eggs if you need to and blend if you are using the blender or mix with a wooden spoon if you are using buckwheat flour.
The batter will be quite thin, and once blended it will look like this:
As I make these pancakes to share with my family, I want them to be as nutritious as can be, so I often add green leafy vegetables such as spinach in the blender when I blend the mixture. My pancakes are green in colour which makes perfect for monster faces!
Now if your kid or yourself will not eat anything green, you can skip the greens, it’s only optional. But if you’re an adult and still have an aversion to green vegetables – sort it out!
=> Preheat the frying pan on a medium heat and coat with olive oil or coconut oil (Please Note: coconut oil is cooling and not that great for Kapha and Vata constitutions). Ghee (also known as clarified butter in Indian cuisine) is better, or olive oil.
Now be creative, if you want to make mini pancakes pour a small amount of batter into the pan, if you want to make bigger pancakes then pour accordingly.
When the batter starts bubbling up and looks dry on top (about 3 minutes) flip over for 1 to 3 minutes then flip over once more, for 1 minute.
Transfer your pancake onto a plate, and if you’re feeding children you can get your kitchen scissors out and carve funny faces in your pancake! I thought this one looked like Jimmy Sommerville from the Communards or possibly even Tintin!
Decorate with what ever ingredients you choose to eat on your pancakes and… enjoy 🙂
You can eat them as pancakes or pour them thinner and you will make crêpes.
In Brittany, where they traditionally eat buckwheat crêpes they roll all sorts of savoury things inside them… along with a bowl of apple cider!
I’d like to end this note with the quote of the day, from my yoga teacher who is also an Ayurvedic therapist:
“Live for the day, get the fucking china out of the cupboards and use it now!”
So get your best crockery out and enjoy!
I don’t have any China but I do have a few items of clothing that I love and never wear because I dont want to wear them out or I keep them for special occasions that never really occur…
So what about if we make everyday a special occasion?
What if we just use the China or wear our favourite clothes just because they make us feel good?
That’s important too! We don’t just want to look good in the eyes of others, we want to feel good.
And when you feel your best, you look your best!
